Sausage Egg Biscuit Breakfast Hobo Pie

Cook a full breakfast over the campfire in a cast iron pie iron with sausage, cheese, biscuits and egg.

I LOVE having eggs for breakfast. I have at least one every morning, including when I’m camping. This breakfast mountain pie not only has a scrambled egg, but also sausage, melty cheese and a crispy biscuit.

It’s easy to make and even easier to eat as a handheld sandwich both kids and adults love.

Don’t love breakfast sausage? You can substitute the sausage for cooked bacon or even any kind of deli meat like salami or turkey.

Camping Breakfast Sandwich Ingredients

  • Refrigerated Biscuit Dough: Biscuits with “flaky layers” work best for this recipe because they’re easier to peel apart to split in half. If you buy homestyle biscuits, you can also just cut them in half.
  • Butter: Butter helps to toast up the crust of the biscuit dough to a nice golden brown color. I would recommend spraying the cast iron cooker with cooking spray and also spreading butter on one side of the dough to prevent sticking.
  • Cooked Sausage: This recipe uses precooked sausage, so you can make it before your trip, cook it in a skillet on your propane stove, or just pack a precooked package of sausage.
  • Cheddar Cheese: You can substitute any cheese in this recipe, but I find cheddar to melt perfectly and give the hobo pie extra flavor.
  • Eggs: Each pie iron fits one scrambled egg perfectly. You can beat each one individually so each pie iron gets one egg, or you can beat all four up at the same time and pour 1/4 of the mixture in each pie iron.
  • Seasoning: Salt, pepper and onion powder are my favorite seasonings to add some extra flavor to the eggs.

Suggested Cooking Equipment

Cast Iron Pie Iron (Camp Cooker): Pie irons are made of aluminum or cast iron, but I highly recommend using cast iron as they withstand much higher temperatures for longer periods of time.

However, aluminum pie irons do not require seasoning and can be cleaned like all other dishes, so there are benefits to using them as well.

Portable Over the Fire Cooking Grate: While cooking in hot coals or embers is ideal for cast iron pie irons, you can also cook over a fire by using a fire grill grate. It’s perfect for a wide variety of campfire pits and can easily be adapted to work at your site.

It’s also great if you just started your fire and want to get cooking right away! Simply place your pie irons on the grate and turn halfway through cooking.

Steps By Step Notes

1. Split each biscuit in half

Remove biscuits from the package and split it in half, using the layers as a guide. Stretch each piece out slightly to be close to the size of your pie iron. Butter one side of each piece (optional) and set aside.

2. Scramble eggs and prep ingredients

Beat eggs with milk and salt, pepper and onion powder. Cut sausage in half lengthwise and slice cheddar cheese into 12 slices.

3. Prepare the pie iron

Depending on how seasoned your pie iron is, you may be able to skip this step. But especially when cooking eggs, I always like to play it on the safe side and add extra oil to prevent sticking.

Rub cooking oil on the inside and the lip of the pie iron, or spray it all with cooking spray.

4. Assemble the breakfast sandwich

Place the biscuit half, butter side down, into the pie iron. Put a sandwich size slice of cheese on top, then two sausages (four halves) on top of the cheese. Pour one scrambled egg on top and then place another biscuit half on top, butter side up. Close the pie iron.

5. Cook over campfire

Carefully move the pie iron over to the fire, keeping it level the entire time so the egg doesn’t leak out.

I recommend cooking over the fire on a grate for this recipe, so the pie iron stays level until the eggs have a change to set.

Flip the pie iron after 3-5 minutes and cook on the other side.

  • Hot coals: Place pie iron directly in the hot coals and embers from your fire. If your fire has been going for awhile, simply pull a pile of coals a bit to the side and place the camp cooker on those hot coals.
  • Over the flame: Use a grill grate to create a flat cooking surface over the fire. Place the camp cooker on the grate and let it cook.

5. Enjoy!

Remove your handheld breakfast from the pie iron and enjoy!

  • 4 refrigerated biscuits
  • 4 eggs
  • 2 tbsp milk or water
  • 8 pieces breakfast sausage links
  • 4 slices cheddar cheese
  • salt, pepper and onion powder, to taste

Instructions

  • Spray the inside of pie iron with cooking spray or coat with oil.
  • Split 4 biscuits in half, using the layers to peel them apart. Butter one side of each biscuit.
  • Place one biscuit, butter side down, into the pie iron. Add a slice of cheddar cheese and two sausages, cut in length lengthwise.
  • Beat eggs with milk or water and season with salt, pepper and onion powder. Pour approximately one egg into each pie iron.
  • Add a biscuit, butter side up, on top. Then, close the pie iron, keeping it level so the eggs don't leak out.
  • Place on a cooking grate over the campfire and cook for approximately 10-15 minutes, flipping halfway through cook time.
