Sausage Egg and Cheese Biscuit Campfire Breakfast

An entire camping breakfast wrapped up in one handheld hobo pie! Sausage, egg and cheese cooked inside a biscuit that gets toasty in a pie iron over the campfire.

Equipment

  • 4 cast iron pie iron cookers

Ingredients

  • 4 refrigerated biscuits
  • 4 eggs
  • 2 tbsp milk or water
  • 8 pieces breakfast sausage links
  • 4 slices cheddar cheese
  • salt, pepper and onion powder, to taste

Instructions

  • Spray the inside of pie iron with cooking spray or coat with oil.
  • Split 4 biscuits in half, using the layers to peel them apart. Butter one side of each biscuit.
  • Place one biscuit, butter side down, into the pie iron. Add a slice of cheddar cheese and two sausages, cut in length lengthwise.
  • Beat eggs with milk or water and season with salt, pepper and onion powder. Pour approximately one egg into each pie iron.
  • Add a biscuit, butter side up, on top. Then, close the pie iron, keeping it level so the eggs don't leak out.
  • Place on a cooking grate over the campfire and cook for approximately 10-15 minutes, flipping halfway through cook time.
