Pie Iron Strawberry French Toast

Ingredients

  • 8 slices Texas toast bread, or other thick sliced bread
  • 3 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 pinch salt
  • 2 tbsp strawberry preserves
  • 1 cup sliced strawberries

Instructions

  • Spray the inside of the pie iron with cooking spray and set aside.
  • In a bowl, whisk together eggs, milk, salt, vanilla and cinnamon. Dredge both sides of the bread in the mixture and set aside.
  • Place one slice of bread inside the camp cooker. Add 1/2 tbsp. of strawberry preserves on each sandwich and then add sliced strawberries. Place another piece of bread on top.
  • Close the pie iron around the strawberry french toast. Trim away excess bread from around the edges.
  • Cook for approximately 10 minutes, flipping halfway through.
