- 4 eggs
- 12 slices bacon
- 2 cups frozen hashbrowns
- salt and pepper, to taste
- 1/2 cup cheddar cheese, optional
Spray the inside of pie iron with cooking spray.
Lay 3 slices of bacon across the bottom half of the pie iron (leave the other half hanging over the side for now).
Place 1/2 cup of frozen hashbrowns in each pie iron.
Lightly scramble eggs, seasoning with salt and pepper. Pour approximately two eggs into each pie iron.
Fold the bacon over the top and close the pie iron.
Place on hot coals or next to heat source and cook for approximately 15 minutes, turning halfway through cook time.
