Beefy Macaroni and Cheese Campfire Casserole

Everything in this melty cheeseburger casserole is cooked in one pot over the campfire. It's an easy and delicious camping family dinner!

Ingredients

  • 1 lb. ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups macaroni noodles, dry
  • 3 cups milk, or water
  • 1 1/4 cups cheddar cheese, shredded
  • 1 1/4 cups monterey jack cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1 tbsp dijon mustard
  • salt and pepper, to taste

Instructions

  • Place your dutch oven on 10 coals and sauté the onions, garlic and ground beef (seasoned with salt and pepper) until it's no longer pink.
  • Pour the dry macaroni and milk into the dutch oven. Cover with a cast iron lid and add 10-12 coals on top of the lid. Cook for approximately 10 minutes until the noodles are tender (and most of the liquid is absorbed).
  • Stir in the dijon mustard until evenly incorporated. Add the cheeses and stir until the cheese melts. If needed, place the lid back on top until the cheese are completely melted.
  • Top with avocado slices or green onions.
