These chicken pot pie pockets are so easy to make in a pie iron. Don't have a pie iron? Check out all of the other ways you can make these pockets.
Cut pie crust into squares slightly larger than your pie iron. Lay one square on bottom of pie iron and spoon 1 tbsp of chicken soup on crust.

Add cooked chicken and veggies to the pie iron. Top with an additional tbsp of soup.
Place another piece of crust on top and close the pie iron. Cook for 15 minutes.
